Citrus Salad

This is a lovely, fresh, zesty summer salad for accompanying fish (seabass or cod, for example) or bbq'd meats or perhaps some leftover roast chicken.

  • SERVES 4
  • 2 Oranges
  • 1 Pink Grapefruit
  • A handful of fresh mint leaves
  • 1 tablespoon Chilli Flakes
  • 1 tablespoon Olive Oil
  • A handful of good quality, pitted black and green olives (optional)

Method

one. Peel the oranges and grapefruits (by hand, or with a knife) to remove the skin and all the white pith. Cut them into slices.

two. Sprinkle with chilli flakes, season with salt and pepper, drizzle over the olive oil, throw over the mint and the olives, if using.
