Jerk Chicken with Sweet Potato, Pineapple and Lime

Another amazing recipe from Rukmini Iyer. This one's from "The Roasting Tin Around The World." Delicious- sweet pineapple, spicy jerk chicken, sharp lime and mellowing sweet potato. All you need in one tin but you could serve with rice.

  • 2 Sweet Potatoes, cut into quarters
  • 1 Red Onion, cut into quarters
  • 8 Skin-on, bone-in chicken thighs
  • 1 Pineapple, cut into slices/ wedges
  • 2 Limes, halved
  • 3 teaspoon Jerk seasoning
  • 3 teaspoon Demerara sugar
  • 3 Garlic Cloves, grated
  • 3 tablespoon Olive Oil
  • 1 teaspoon Sea Salt flakes

Method

one. Preheat the oven to 180ยบ

two. Tip the sweet potatoes, onions, chicken, pineapple and limes into a roasting tin big enough to hold them in one layer, then mix everything well with the jerk seasoning, demerara sugar, grated garlic and olive oil. Scatter everything with the sea salt flakes, making sure to get plenty on the chicken skin, then transfer to the oven and roast for 1 hour.

three. After 1 hour, remove the tin from the oven and let the chicken rest for 5-10 minutes. Squeeze the juice from the roasted limes over everything, taste and adjust the salt as needed, scatter with a little fresh coriander and serve hot.

Serving Suggestion. Finely Chopper Coriander Sour Cream or Natural Yoghurt

Possible Amendment. I substituted the Sweet Potato for Pumpkin when that was what arrived in my Veg Box, and it was delicious!
