A traybake of Brill with tomatoes, borlotti beans and white wine

This is a glorious traybake amended from Gordon Ramsay. He uses Halibut (or other similar meaty white fish, such as Cod). I've used Brill and would also use any similar flat fish (such as John Dory, Turbot, Dover Sole). This is impossibly quick and easy to do -dinner is on the table in under 30 mins from the start of preparation. It's also absolutely delicious and sanctimoniously healthy.

  • 4 Brill Fillets
  • 4 Cloves of Garlic, thinly sliced
  • 800 g Borlotti Beans (i.e 2 cans)
  • 1 teaspoon Chilli Flakes
  • 1 tablespoon Small Capers
  • 2 Rosemary Sprigs, finely chopped
  • 1 Unwaxed lemon, finely sliced
  • 150 ml Dry White Wine
  • 3 tablespoon Olive Oil
  • Salt & Pepper

Method

one. Preheat the oven to 180Âșc.

two. Put the tomatoes and drained borlotti beans into a roasting tray. Place the fish on top, scatter over the chilli flakes, garlic pieces, capers and rosemary. Place the lemon slices on top. Season with salt and pepper.

three. Pour over the wine, then drizzle with the olive oil.

four. Cook for 15-20 minutes or until the fish is cooked through.

Serving Suggestion. I serve with a generous portion of vegetables such as asparagus or purple sprouting broccoli.
