Quick Cucumber Pickle

This is a tangy accompaniment to service with teriyaki salmon, or it could even be eaten with rice for a light meal.

  • 1 Cucumber. Peeled, halved and seeds scraped out
  • 2 tablespoon Soy Sauce
  • 2 tablespoon Rice Vinegar
  • 1-2 teaspoon Sugar or agave
  • 3cm knob of ginger, peeled and grated

Method

one. Slice the cucumber halves and toss with a large pinch of salt. Mix together the other ingredients and add to the cucumber. Leave to marinate for half an hour before serving.

Serving Suggestion. Teriyaki Salmon or a Bowl of Rice
