  • SERVES 4
  • 4 Organic Salmon Fillets
  • 3 tablespoon Mirin
  • 3 tablespoon Sake
  • 1 tablespoon Runny Honey or Brown Sugar
  • Zest of One Lime
  • A Thumb Sized Piece of Ginger, peeled and grated

Method

one. Preheat the oven to 180Âșc

two. In a bowl big enough to accommodate the salmon pieces, whisk together the miso, mirin, sake, ginger, lime and sugar/ honey. Sit the salmon in the bowl skin side up and coat in the sauce. Leave to marinade for 15minutes to an hour (or overnight in the fridge).

three. Cook in the oven for 12-15 minutes

Serving Suggestion. Pak choi and rice
