Harissa Chicken, Leeks and Potatoes One Pan Bake

This is a fabulous one-pan tray bake, adapted from Melissa Clark's recipe. Spicy harissa chicken, caramelised leeks; salty roasted potatoes; bright fresh herbs and the garlic, zesty tang of the yoghurt. A fabulous supper, thrown together in one pan and quantities easily increased for feeding the masses. It is important not to overcrowd the pan so that the ingredients steam, rather than cook, so consider using multiple trays if increasing quantities and definitely use a metal baking tray to evenly distribute the heat around the pan.

  • 4 Skinless, Boneless Chicken Thighs
  • 3 medium Leeks (Rinsed and sliced widthways into 2cm chunks)
  • 2 Garlic Clove, minced or very finely chopped
  • Zest of one Lemon
  • Juice of One Lemon
  • Salt & Pepper to Taste
  • 12 New Potatoes
  • 1 tablespoon Cumin
  • 3 tablespoon Harissa Paste
  • 3 tablespoon Olive Oil
  • 4 Sprigs of Fresh Dill Leaves
  • A Handful of Fresh Mint Leaves
  • A few Fresh Parsley Leaves (optional)
  • 200 g Plain Greek Yoghurt

Method

one. In a bowl large enough to accommodate the chicken thighs, mix together the harissa paste, cumin and two tablespoons of olive oil. Add the chicken thighs and potatoes and coat all over in the harissa mixture. Set aside to marinate for 30minutes (optional).

two. Preheat the oven to 200ºc. Place the harissa, chicken, potato mix into the baking tray. Drizzle with a tablespoon of olive oil and roast for 15minutes. Meanwhile, toss the leeks with the lemon zest. After the chicken has had 15 minutes, add the leeks and lemon zest to the pan. Then add the lemon juice and season with a generous grind of salt and pepper. Give everything a good stir, and reduce the temperature to 180ºc. Roast for a further 20 minutes, or until the chicken pieces are cooked through.

three. Meanwhile mix together the yoghurt and garlic, season with salt and pepper and stir. When the chicken is ready, remove from the oven, spoon over the yoghurt mixture and sprinkle over the fresh herbs.

Serving Suggestion. One pan bake's need little accompaniments. Just another thing that makes them so appealing.
